Iberian Loin – Lomo Ibérico

One of the most flavourful bites from the Iberian pig. Compared to the Iberian Chorizo, the Iberian Loin is one whole muscle that has been seasoned and cured for a few months with some different species, specially pimentón. As you may already know, pimentón is a typical Spanish smoked paprika. That is the reason why this cut has such an amazing taste and it reminds you of the smoked food from a village in the middle of the mountain.
